Overview

The beginning of the year isn't the only time that you get to make resolutions about your life. If you want change, there is no time like the present! It's a good day for making a fresh start, for turning over a new leaf, and for putting bad habits behind you. You shouldn't wait any longer -- especially if you feel the urge to change now. You have clarity, which isn't always going to be the case. So cut out the bad and start focusing more on the new.

I am working at a boy scout camp for the first 6 weeks of summer and I am so excited! I would make more money working at Calhouns, but it will be totally worth it.

Yellow Squash Hummus Pita Pizza

Ingredients (use vegan versions):

    1 box or can prepared hummus
    OR next five ingredients
    1 can garbanzo beans/chick peas
    4 tablespoons Tahini
    roasted red peppers
    garlic to taste
    lemon juice to taste
    whole wheat pita bread (1-2 whole rounds per person)
    4-6 large yellow squash, washe'd not peeled
    fresh garlic
    2-3 tablespoon olive oil
    1/2 small sweet yellow (Vidalia type) onion, diced
    1/2 cup cheddar type vegan cheese alternative
    lemon pepper to taste

Squatting is the act of occupying an abandoned or unoccupied space or building, usually residential[1], that the squatter does not own, rent or otherwise have permission to use. I think this is awesome, and would be reallly interested in doing it. Maybe next summer? I think id like it too much and never finish college.

new ideas.

Since i've gotten my little journal, I bring it everywhere with me and its actually making me more productive. Its interesting to say the least. I want to make my online blog more interesting also, so i had a few ideas. 
Im going to get some interesting news, a quote, an interesting lyric from a song, one way to go green, and maybe a good vegan recipe.
All I need to do now is try to update this daily, or even weekly. Ill make an effort.

Buy food locally. Farmers markets make a good place to shop. It insures that the veggies your eating are fresh, and the salad your eating didn't travel thousands of miles to reach your plate. It cuts down on fossil fuels and ultimately reduces levels of pollution and resource depletion.

Guacamole and Refried Bean Quesadillas

Ingredients (use vegan versions):

    Guacamole:
    1 small avocado
    1/2 medium tomato, diced
    1-2 spring onions (scallions), diced
    1 tablspoon fresh cilantro/coriander
    1 Small red chilli chopped, or a splash of chilli sauce
    juice of 1/4 of a lime
    a pinch of salt/pepper (optional)
    Quesadillas:
    2 Tortillas
    Vegan refried beans - enough to cover 1 tortilla
    Pre-made Guacamole
    oil for frying (optional)

mmmm, sounds yummy. I'd really enjoy a kitchen with a bed in it, not this crummy dorm.
