Yellow Squash Hummus Pita Pizza
Ingredients (use vegan versions):
1 box or can prepared hummus
OR next five ingredients
1 can garbanzo beans/chick peas
4 tablespoons Tahini
roasted red peppers
garlic to taste
lemon juice to taste
whole wheat pita bread (1-2 whole rounds per person)
4-6 large yellow squash, washe'd not peeled
fresh garlic
2-3 tablespoon olive oil
1/2 small sweet yellow (Vidalia type) onion, diced
1/2 cup cheddar type vegan cheese alternative
lemon pepper to taste

I think this is awesome, and would be reallly interested in doing it. Maybe next summer? I think id like it too much and never finish college.
